All of our wines are crafted from single vineyard, estate grown fruit.  While selling the majority of our ~60 ton crop to other winemakers, we do retain enough of our favorite blocks to make approximately 600 cases for our MonksGate label.  Our 17 acres of Pinot Noir are planted in 3 Dijon clones, 777, 667 and 115 as well as the traditional Pommard and Wadensvil clones.  In addition, we have 2 acres of C12 Riesling.   Fermentation and barrel aging are done in small lots, maintaining the separation of clones until bottling to allow blending by the individual characteristics of the terrior, the fruit and the season.  Our Pinot Noir wines are aged in French Oak with new oak accounting for between 18% and 25% of the barrels designated for our Classic Pinot Noir while our Trinity, or reserve, wines may receive significantly more new oak.
